MEDITERRANEAN SOFT TACOS

If you at any point today thought to yourself, “I really want to start getting more Lignans, Phenols, SGS, and EGCG, but I just don’t know how”, you’re not going to believe this, but you are absolutely in the right place.
One of my favorite quick meals - as you might’ve guessed from the title - is what I call The Mediterranean Soft Taco. How did I stumble onto it? By asking myself one day, “What would happen if I made a soft taco but substituted Mediterranean elements for the tortilla, meat, cheese, lettuce, and sour cream?” I guess it’s really not that impressive.
Here’s what we’re using:
-Flaxseed Pita Bread
-Hummus
-Shredded Mozzarella
-Brocco Sprouts
-Extra Virgin Olive Oil
Take one loaf and spread a spoonful of hummus in the middle of it. Sprinkle some cheese on top of the hummus. Grab a massive handful of brocco sprouts to go on top of that. And then, pour the E.V.O.O. into the brocco sprouts, which should do a decent job absorbing the oil so that your kitchen doesn’t turn into the Gulf Of Mexico (slick going, BP.)
I’m not a vegetarian by any stretch, but I do try to limit how much animal protein I eat these days, so in lieu of meat, I’m pretty liberal with the olive oil. I know it’s high in fat, but it’s high in the right kind of fat.
Takes less than a minute to put together, and it pretty much rules, folks.
Steep yourself a cup of Green Tea w/ honey to get your EGCG, and call it Lunch.
